Protecting the environment and conserving resources is without a doubt one of the greatest challenges of our time. Every little helps when it comes to using local resources, promoting environmentally friendly processes and avoiding waste.
Mushrooms have been cultivated in Vienna since 2015 - on coffee grounds, a resource that is almost infinitely available in a big city like Vienna. Instead of being discarded as waste they are collected from various Viennese cafés, restaurants and office canteens. After arriving at the production facilities, the coffee grounds are mixed with mycelium (the mushroom seed) and used as a breeding ground for the oyster mushrooms.
Shortly after the harvest, the mushrooms are delivered to restaurants and sold on markets. In case of not selling them all, the remaining ones are processed into delicious products such as pesto, spread or sugo.
